8. Chicken Scallopine
This recipe is not presented as gluten free but it can easily be turned in to a gluten intolerant friendly meal just by making a few tweaks to the recipe. These pieces of chicken will be pounded thin and coated with gluten free Chex cereal or gluten free bread crumbs. Your seasonings will be included in whichever main breading you choose. Each piece of chicken will then be fried in a thin layer of pan oil, then flipped. These chicken pieces are usually served with a deliciously creamy sauce that is ladled over the top. A meal like this is a wonderful choice for a busy night when time is short.
