Fenugreek seeds have an abundance of soluble fiber which slows down digestion and the rate of carbohydrate absorption. In particular, fenugreek contains a protein known as 4-hydroxyisoleucine which is believed to stimulate the pancreas to produce insulin. The combination of these actions help lower blood sugar and normalize insulin levels. They also reduce cholesterol levels to improve overall health.
Tip: Soak 10 grams of the cleaned seeds in hot water overnight and consume the concoction the next morning on an empty stomach.
