Fenugreek, an uncommon herb used in western cooking, is a hugely popular ingredient for Indian curries. Fenugreek is high in protein, particularly 4-hydroxyisoleucine which is thought to be responsible for the herb's effectiveness in slowing down the rate of sugar absorption after meals. The primary active compound in fenugreek is also believed to aid insulin production in the pancreas. Consuming the leaves and seeds of the plant is highly beneficial for diabetic patients.
