Canned vegetables usually contain a high amount of sodium and fat, especially for the flavored varieties, which are two taboos in diabetes diet. On top of that, they also contain food preservatives such as sulfites which can cause allergies in some and bisphenol A(BPA) which are associated with heart diseases and cancer. Although it has been found that the key vitamins and minerals of canned vegetables are well preserved, limited consumption is still recommended due to the added chemicals.
Tip: Always choose products which are non-flavored and unsalted.

We love cucmbers salad, however, other than filling you up with water, it does not provide any substantial amount of nutrients for your body. It is important to understand that other then counting carbs and limiting sugar intake, a healthy diabetic diet also means consuming the essential vitamins and minerals required for optimal body functions. Cucumber just did not make the cut for this.
Tip: Go for Zucchini instead! Zucchini provides a wide range of vital nutrients in adequate amounts. Zucchini contains twice the amount of vitamin A and 6 times the amount of vitamin C as compared to cucmber.
